Stuffed Chicken Parmesan

Italian food has never been so good on your waistline.

Ingredients

Directions

  1. Heat oven to 375 °F (190 °C). Spray 13x9" (3-quart) glass baking dish with cooking spray.
  2. Between pieces of plastic wrap or waxed paper, place each chicken breast smooth side down; gently pound with flat side of meat mallet or rolling pin until about 1/4" thick.
  3. In medium bowl, mix spinach, cream cheese, parmesan cheese, 1/2 teaspoon basil and the garlic until blended.
  4. Spread about 1 tablespoon spinach mixture over each chicken breast; roll up tightly. If necessary, secure with toothpicks.
  5. In small shallow bowl, place egg product. In another small shallow bowl, mix cracker crumbs, 1 teaspoon basil and the pepper.
  6. Dip each chicken breast into egg product; coat with crumb mixture. Place seam side down in baking dish.
  7. Bake uncovered for 20 minutes. Pour pasta sauce over chicken; sprinkle with mozzarella cheese.
  8. Bake 10 to 15 minutes longer or until thermometer inserted in center of chicken reads 165 °F (75 °C). Remove toothpicks from chicken before eating.

I changed this up a bit for the WW points. I used non fat unflavored yogurt with the spinach and I added some black olives to mixture. Came out delicous. I figured each chicken breast was worth 8 points with the sauce and cheese on it.

I found a good pasta sauce for this at Fresh and Easy---but we found that the amt. of pasta sauce was not quite enough---I will at least double it next time. This is a great recipe otherwise and while I made the whole recipe, we only ate 2 pcs. and the leftovers were great.

This was really good, but sadly I couldn't get past my aversion to spinach. Next time I'll modify it a bit, but a great alternative to my old chicken parmesan. :)

My family loved it. Great recipe. Cant wait to make it again. The filling was a little dry for me though. I would add a little more cream cheese.

I made a few changes to the recipe (mostly because I didn't have all of the ingredients and had to improvise) but it was absolutely delicious. And my fiance loved it too :)
