Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C) and tenderize the chicken breasts between two sheets of stretch wrap then season with dash of salt.
- Take basil leaves, olive oil, pine nuts and parmesan and blend to preference in a food processor, then gently mix in crumbled feta cheese (fat free if available).
- Place half of pesto feta mixture in the middle of each chicken breast and wrap the chicken around filling.
- Place the wrapped chicken seam side down on to a lightly oiled pan, drizzle with a touch of olive oil then lightly salt and pepper.
- Place in oven for 35-40 minutes uncovered.
- then turn broiler on high and broil for an additional 4-5 minutes.
- Drizzle drippings over plated chicken and serve.
