Mini Meat Loaves

Cooking meatloaf in small portions cuts cooking time and keeps meat juicy.

Ingredients

Directions

  1. Preheat oven at 400 °F (205 °C).
  2. Combine ketchup and mustard, stir with a whisk. Reserve 2 1/2 tbsps of ketchup mixture.
  3. Combine remaining ketchup mixture, beef and the remaining ingredients in a large bowl, stirring to combine.
  4. Divide beef into six equal portions and put in a 6 piece muffin pan coat lightly with cooking spray.
  5. Spread the reserved ketchup mixture evenly into the meatloaves.
  6. Bake for 25 minutes or until done.

Made these and they are great. I liked the individual muffin size serving. I added a little cheddar cheese in the middle of each one. Just a smidge. Yummy!

I liked this recipe as is except next time I will add more seasoning and less Dijon mustard or use regular mustard. The Dijon gave it too sweet of a taste. Loved the size of the "loaves" as well.

Love these! I switched up the ingredients a bit, but they are the perfect size. Hubby loved 'em too!

This will be simple to fix. It has very few ingredients which will make it lower in fat.
