More like a cheese Danish that gets scrambled. For a weekend brunch, or even supper.
Ingredients
Directions
- Soften cream cheese.
- Scramble eggs and add cream cheese. Mix with hand blender.
- Add all other ingredients except butter and mix well.
- Heat skillet, melt butter. Pour egg mixture in pan.
- You can try to make it like a pancake or crepe but mine end up similar to scrambled eggs. Cook until starts to brown.
- Note: recipe is good as is, or with sugar free syrup, or sprinkled with cinnamon or nutmeg.

Tastes much better than it sounds. It is a nice switch from my normal egg omelet for breakfast. I make mine in a small iron skillet, let it cook on top the stove and then move it to the broiler to finish it. Thanks.

Even my non-Atkins husband loved this dish! It does use up all the non-foundation veggie carbs...during induction!
