Chicken Parmesan Florentine

A fast, easy, delicious, one dish casserole meal.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C). Lightly spray the bottom of a 9x12 glass baking dish.
  2. In a bowl mix parmesan and Italian seasoning.
  3. Roll chicken in parmesan to coat and place pieces in one layer on bottom of baking dish.
  4. Saute onions in butter for 1 minute. Add flour, stir.
  5. Over medium heat add milk stirring with whisk to blend evenly. Continue stirring until sauce thickens slightly. Add spinach and blend thoroughly.
  6. Spread spinach mixture in a layer over the chicken. Top with remaining parmesan.
  7. Bake for 35-45 minutes until top begins to brown.
  8. Remove from oven, let sit 5 minutes, before serving.

This a great recipe for low carb high fat. Thanks for posting. I too changed the milk to cream, chopped onion instead of french fried onions and just left out the flour. Yum! I'll make if for my next potluck meeting.

This recipe was yummy. I used Mrs. Dash instead of the italian seasoning since I didn't have any. I cut each chicken breast into five pieces and cooked it for 40 minutes. Chicken was a little dry so next time I will check it after 35 minutes.

It was delicious! I used a regular chopped onion, and added a red pepper. So good.

This was really good! I substituted half and half for the milk and carbquik for the flour and herbs de provence for the Italian seasoning (because I was out) and it was absolutely delicious. My whole family loved it - even my daughter who abhors spinach.

I changed the recipe a little. I used a chopped onion instead of the french fried onions, and I used 2 tblsps of wondra flour. I really liked it. It has a very good taste.

This was very filling and had a great taste. I also made it with Tilapia instead of chicken and reduced the cooking time to 25 min. Also very tasty!
