Cinnamon Oatmeal Pancakes

Excellent oatmeal pancakes make for a smashing breakfast.

Ingredients

Directions

  1. Combine oats with all the other ingredients in a bowl and mix well until a batter forms.
  2. If you use large eggs you may find you needs to add a spoonful more of oatmeal to keep the batter from being too runny.
  3. Spray pan with cooking spray or lightly oil the pan.
  4. Spoon batter into pan and cook over medium heat just like regular pancakes.
  5. Topping suggestions include, warm crushed pineapple (my favorite), applesauce, fresh berries and yogurt.

I love them but my 1yr old fed them to the dog... He prefers his pancakes sweeter. Oh and I used stevia rather than Splenda ... Topped with some cinnimon pares it was very yummy

This is a great alternative to flour pancakes! My 13 yr old son loves it. I used quick oats rather than packets (3/4 c.) and used 1/3 c. egg beaters instead of 2 whites. I pulsed the oats a few times in my ninja blender to make them fine. I didn't have nutmeg so I used pumpkin pie spice rather than the cinnamon and nutmeg (1 tsp). I also used fat free half and half for the milk and rather than splenda I used the brown sugar Ideal sweetener. I had to sub alot but it came out fantastic! We topped ours with Mrs. Butterworths sugar free syrup but warmed fruit would be awesome!

I had these this morning and they were great! So much better than the gluten free mix from the store, blah! I did not have milk so I used water but they still turned out. I might put some wey protein in them next time.

I tried these out this morning and thought they were great! I had to modify a bit - I didn't have the packets of instant oatmeal so I used about 3/4 c of quick oats which made them a little thick, but definitely filling. (Next time I might throw the oats in the blender and make them finer.) The batter made 3 large pancakes. I ate two and topped them with smashed bananas...awesome Smash Diet breakfast!
