Sausage Frittata

A tasty hot sausage frittata, perfect for any time of the day.

Ingredients

Directions

  1. Cook sausage with onion, garlic and green pepper in a skillet.
  2. Whisk eggs and cream in a bowl, add salt and pepper to taste.
  3. Lay sausage mixture in 9 x 13" greased pan. Lay shredded cheeses over top of sausage. Pour egg mixture over top of all.
  4. Put in a 375 °F (190 °C) oven for about 20 minutes until knife in center comes out clean.
  5. Remove from oven and let sit for 5 minutes. Cut into squares. Serve warm or cold.
  6. Note: spices can be added for more flavor.

I made this last night, but made a few changes to lower the carbs. Instead of using onions, I used onion seasoning, and I only used 6 eggs. 10 would have been way too much for my taste. I also seasoned the sausage with sage and cumin, and I cut the bell peppers up and cooked them along with it. Mine made 4 one-cup servings, so I can only imagine how small the servings are if it serves 12. Mine was very filling, and because it has fewer carbs total, you can have a larger portion.
