Quorn 'Chicken' Fillets with Tomato & Rice

Easy recipe with just a few ingredients, all easy to store. Low fat and tasty.

Directions

  1. Put the rice on to cook.
  2. Lightly fry the onion in the oil until it's soft, add the Quorn fillets and some fresh chilli or herbs if you like.
  3. Add the tomatoes. Give it all a good stir, cover and simmer for 10 minutes (to make this lower fat, add the tomatoes straight away and miss out the oil).
  4. When the rice is soft, drain and rinse with boiling water.
  5. Serve the tomato and Quorn on the rice bed.
  6. Note: if you have calorie and fat allowance to spare, add a small grating of cheese.
