Omelette Muffins

Excellent Sunday morning breakfast when you have that little bit of extra time to make something your whole family can enjoy.

Ingredients

Directions

  1. Preheat oven to 190 °C. Spray the muffin tin with non-stick spray.
  2. Dice the chicken, onions, red and green peppers and place them in the bottom of 6 muffin trays evenly.
  3. In a large bowl crack the eggs and whisk. Add egg whites, salt and pepper and whisk until well blended.
  4. Using a soup ladle pour the egg mixture over top of the chicken and vegetables until each tin is 3/4 full.
  5. Top each muffin with shredded Parmesan cheese and place the tin in the oven. Bake for 40 minutes or until tops turn golden brown.
