Sweet Potato Home Fries

Easy and nutritious breakfast side.

Directions

  1. Preheat your skillet over medium-high heat.
  2. Peel and dice the potato.
  3. Add coconut oil to the pan and add potatoes with salt and pepper. Stir every minute or so to get some color on the potatoes
  4. Dice the onion.
  5. When the potatoes have cooked a little on all sides, add the onion and chili powder. Reduce heat to low-medium.
  6. Cook, stirring, until potatoes have a little color and onions are soft. Divide and serve.
