Cream Cheese Biscuit

A very low carb breakfast muffin.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C).
  2. Soften cream cheese in microwave for 20 seconds. Add yeast, cream, vinegar and 2 tablespoons warm water and mix.
  3. Add eggs one at a time and mix well.
  4. Add the dry ingredients and mix well.
  5. Add the cheese and mix. Scoop into muffin pan.
  6. Bake for 15 minutes.

Nice little muffin. Did the mini muffin size and the normal cup cake sized tins. I prefer the mini muffin size. Just happy I can have a bread on a low carb diet.

OMG! I love these little biscuits! They have been a life saver in the mornings. I made a batch and stuck them in the frig, they are great for grab and go moments. Love this recipe.

I "sold" these to my family as "Mozzarella Muffins" and they have gone crazy for them! No comments about how "it's not right without flour" or "the dog wouldn't eat them" like my normal low-carb baking efforts. Fantastic recipe!
