Directions
- Whisk egg white, add pepper & salt.
- Cut cherry tomato as desired.
- Chop parsley.
- Pour egg white into omelette pan, cook for a couple of minutes on medium, then add chopped parsley and half of the tomato.
- Flip one side of the omelette over the other so the tomato and parsley are tucked in the middle.
- When cooked, slide onto plate with rocket and remaining tomato on the side.
