- Line a baking sheet with parchment paper and oil it with a bit of coconut oil.
- Combine coconut flour with protein powder and baking soda in a bowl.
- Combine coconut oil, honey, cinnamon, and vanilla extract in a separate bowl. Stir vigorously until coconut oil and the ingredients are well combined.
- Add the coconut flour mixture to the coconut oil mixture. Combine well until it forms one dough ball.
- Form the dough into 19 balls. Flatten them out with a spoon or fingers to form cookies.
- Bake in the air fryer at 180 degrees for 4-5 minutes until the edge crispens up.
- Remove the cookies from the oven and let them cool down before serving.
