Directions
- Place chicken, diced tomatoes and chilies in a saucepan.
- Chop onion and add to pan.
- Add raw brown rice, seasonings and chicken broth. Cover.
- Once it boils, lower to a simmer and cook for 20 minutes.
- Note: cheddar cheese, sour cream or a few tortilla chips can be added for a few extra calories.
