Crustless Spinach & Feta Pie
Easy breakfast, side or main dish, good hot or cold.
Ingredients
Directions
- Saute onions and garlic in olive oil, let cool.
- Mix together all ingredients.
- Spray 10" pie pan with cooking spray.
- Add mixture to pie pan.
- Bake in 350 °F (175 °C) oven for 45 minutes.
- Note: herbs and other vegetables such as mushrooms can be added if available.

This is excellent!! It even looks like it has a small crust around the edge. I used egg whites, 4 chopped mushrooms and about a tablespoon of diced red pepper (changes I made).

Today when I baked this, I added chopped sun-dried tomatoes, which I think I like better than the bell pepper. I also sauteed a large portabella mushroom, cut into small-ish pieces, draining off the liquid before adding to the mixture. Plus lots of chopped fresh herbs from the garden (basil, parsley, marjoram, thyme, maybe others).
