Sea scallops with spinach and cannellini beans in a white wine sauce.
Ingredients
Directions
- Dry scallops in paper towels. Salt.
- Brown scallops in olive oil, and cook for 2 minutes each side. Remove and set aside.
- Brown onions, for 2 minutes.
- Add garlic and crushed red pepper and white wine, cook for 1 minute.
- Add broth and beans (drained if canned), cook for 2 minutes. Stir in spinach (or arugula) till wilted.
- Remove from heat. Stir in basil. Serve and enjoy.
- Note: based on recipe from Cooking Light.

I'm finding that I don't like cooked spinach so I would leave it out or substitute something in place but the flavor of it is good!! My friend loved every bite of it the way it was!!

Delicious, easy to prepare, and it looks rather "fancy". This is something I think I could prepare for guests and not feel like I am making them eat my "diet" food.
