Portuguese Kale Soup

A traditional Portuguese soup which can be made as hearty as desired.

Ingredients

Directions

  1. Bring salted water to a boil. Add potato and onions to water.
  2. Using an immersion blender, puree the boiled potatoes and onions (remove some water if a thicker broth is desired, or for a thinner broth add more water).
  3. Add kale leaves into soup.
  4. Saute chorizo in olive oil. When lightly browned, add the chorizo and the drippings into the soup.
  5. Serve hot.

Reviews 
This sounds wonderful, but if on Atkins or any other low carb diet, I recommend passing on the potatoes and substituting with cabbage or cauliflower.

I enjoyed this soup. I made it with ground Italian sausage though and it reminded me a lot of the zuppa tuscano at Olive garden. Also added red chili flakes because I like things HOT.
