Egg and Sausage Muffins

The no excuse breakfast! These faux muffins are worthy of serving to guests.

Ingredients

Directions

  1. Preheat oven to 350 °F (175 °C). Spray muffin tin with cooking spray like Pam (can also use mini bundt muffin pan).
  2. Spoon cooked sausage in to the tin, filling 1/2 way.
  3. Mix eggs, cream and other additions (optional: cheese, salsa, bacon, onion - be creative) together and spoon on top of the sausage until almost full.
  4. Bake for about 20 minutes, until eggs are done and slightly golden.
  5. Remove from oven and let sit for a couple minutes. Gently use a spoon to remove the "muffin like" creations.

I just made these ( split the recipe in half) & they were so good. I used foil muffin cups but they stuck so I would suggest spraying the muffin cups before adding the ingredients. Otherwise they would've gotten a 5 star!!!

I used turkey sausage and fat free half and half....better numbers and still tasted good. Oot- cream that is "half and half" is equal portions of heavy cream and milk. It's a trade name in USA. Pam is a vegetable spray used for baking, frying, etc. wherever you need normally to grease a surface. It's another trade name. American is often its own language. Just ask someone!

I made these today for lunch and they are really good! I only used 10 large eggs, and added garlic powder, black pepper and sage. It made 18 "muffins" and they easily came out of the pan. Mine had a little more carbs, but not much (.916 each), but I can deal with that lol. Probably a difference in ingredient brands. Will definitely make again and again!
