Quorn 'Chicken' Fillets with Tomato & Rice
Easy recipe with just a few ingredients, all easy to store. Low fat and tasty.

Directions
- Put the rice on to cook.
- Lightly fry the onion in the oil until it's soft, add the Quorn fillets and some fresh chilli or herbs if you like.
- Add the tomatoes. Give it all a good stir, cover and simmer for 10 minutes (to make this lower fat, add the tomatoes straight away and miss out the oil).
- When the rice is soft, drain and rinse with boiling water.
- Serve the tomato and Quorn on the rice bed.
- Note: if you have calorie and fat allowance to spare, add a small grating of cheese.
