A beautiful dip made which can be served as an appetizer with toasted pita fingers...very yummy.
Ingredients
Directions
- Toss the veggies with enough olive oil to coat lightly, and sprinkle with salt and pepper.
- Spread evenly on a baking sheet.
- Bake in a 190 °C preheated oven for 20 minutes. Check on the veggies, pushing them around and then bake another 8-10 minutes, or until the veggies are soft.
- Roughly mash the veggies with a potato masher. Add another drizzle of olive oil.
- Served chilled or warm.
