Veggie Pancakes

Crispy veggie pancakes cook up fast and provide a blend of healthy veggies.

Directions

  1. Blend the egg and spinach with salt.
  2. Peel and grate on a coarse grater the potatoes and courgette.
  3. Mix all the ingredients.
  4. Drop olive oil into a frying pan and fry on both sides. Add the parmesan cheese on top!
