- Preheat grill to high.
In a small bowl combine the coconut oil, lemon juice, spices, salt and pepper.
- Slice the salmon into bite-size pieces.
Add the salmon to the bowl and coat the salmon in the marinade.
- Create 3 skewers alternating salmon, tomatoes and mushrooms.
- Grill until cooked.
