Delightful spinach with cream cheese, mushrooms, onion and monterey jack cheese.

Directions
- Sauté onions and mushrooms in butter.
- Thaw spinach in microwave and drain.
- Add spinach to onions and mushrooms.
- Add cream cheese, whipping cream and monterey jack cheese. Blend well.
- Heat until all cheese is melted and dish is hot.

Reviews
I made it with 10 oz of fresh instead of 12 oz of frozen. It was more like a cheese dish - delicious and filling but not as spinachy as I would have preferred. Next time I will double the fresh spinach or maybe try with the frozen.

Delicious sidedish that's easy to prepare and tastes like it should be served in a 4 Star restaurant. Even my "high carb" boyfriend loved it!
