Cheese Crackers
A quick and easy low carb recipe for something different.
Ingredients
Directions
- Preheat oven to 400 °F (200 °C).
- Dice the cheese (like Velveeta) and butter into chunks.
- Put the cheese chunks, butter, flaxseed meal and shredded cheddar into a food processor and pulse until the dough is well combined. (Cut the recipe in half if you only have a small food processor.)
- Coat a cookie sheet with non-stick cooking spray.
- Drop spoonfuls of dough on to the cookie sheet. (These really spread out when baking, don't worry, you can cut them to desired size after baking.)
- Bake for 8-10 minutes or until the crackers are just getting brown around the edges.

I didn't like these. They didn't turn out the way I thought they would. they were not crunchy. I spread them on a cookie sheet and maybe that was the problem and I didn't use Velveeta either, so maybe that is why I didn't like the taste. I didn't think that Velveeta would be low in fat so I didn't look.

I'm confused, do you use Velveeta? On Step 2 it says dice cheese like Velveeta. The recipe says shredded cheddar. I want to try this, but I am confused.

These are AWESOME! They taste just like Cheez-its! I used Smart Balance instead of butter. Also the next time I make these, which will be soon, I will spread the mixture on a cookie sheet and cut them into the sizes I want. PS- They stick to aluminum foil.
