Directions
- Pre-heat oven to 350 °F (175 °C). line standard muffin tins with paper liners
- Mix flour, baking soda, baking powder, and salt together in a medium bowl.
- Mix milk, oil and vanilla together in a small bowl.
- In a large bowl, cream together shortening and sugar using an electric mixer on medium speed for 3 minutes.
- Add eggs, one at a time, beating well after each addition.
- Add flour mixture alternately with milk mixture to the shortening mixture and mix well.
- Fill each muffin cup with 2 tablespoons of batter
- Bake at 350 °F for 15-18 minutes. Note: based on a recipe from the "hello cupcake" book.
