Every time I roast a whole cauliflower it feels like a special event! It is one of my favorite recipes but the last time I made it, I was 25lb heavier. That was back in May. My partner took a photo of me holding it proudly and I am ashamed of that picture now. I did not like what I saw. In May the cauliflower was twice the size (that image really stays to mind) and was surrounded by lots of couscous and pistachios. It was tasty but it was not something you could eat daily, but this is! Luckily, I like this version way better too! The dish I made today was half the size (thanks to my grocery delivery/lottery) and this time it’s made with less oil and served with a mixed salad 😋. I am thankful for those internal changes. When I started this journey I did not expect to take this long to lose weight tbh but instead of fast weight loss I've built a lifestyle inspired by all I am learning. Thank you everyone, being part of a community has also taught me to be mindful, accountable and have fun along the way 🤗💕

You are doing great Nutricali, you are conscious and mindful and from what you post you know what and how to eat!@ Not to mention your dishes 🍽 look always so yummy and aesthetically beautiful, you can eat them with your eyes 👀 without touching them... that's what food stimulates and inspires! Anne I thought I was cooking a healthy meal at the time but I like the cauliflower metaphor lol, I think maybe I should change my icon! It just goes to show how bad habits can creep in unless you’re paying attention 😅
