For the 1st time in a couple months I am working on food prep plans for the coming week, my grocery list is longer than normal as I am out of or almost out of so many basics. I have lots of frozen veggies etc that I bought just as the shut down was about to happen. I have only been picking up a couple things there and there and not from my usual stores that have more varied and fresh options. So food has been whatever I can do with supplies on hand without much thought or planning.
Still concerned about getting out much since Memorial Day get togethers and all the mass protests here in the metro and the expected spike in Covid cases. I really want to go to the gym but leery on that also. Might try this weekend as they are pretty quiet on weekends.
Boneless skinless chicken thighs are marinating to do on the grill tonight with planned leftovers for salads etc. Not sure about sides yet.
