Roast Butternut Wedges

Spiced wedges roasted in the oven.

Ingredients

Directions

  1. Top and tail the butternut, cut it in half and scoop out the pips.
  2. Cut each half lengthways into 3 wedges, rub with olive oil season with spices and salt.
  3. Place wedges on a baking tray and roast in the oven at 180°C until golden and soft.
  4. Serve as a side dish, or torn into salad or frittata.
