Baby Marrow & Mushroom Bake

A very easy and delicious side dish.

Ingredients

Directions

  1. Thickly chop onion, cut zucchini in quarters, mushrooms in halves, broccoli in small flowerets and finely chop the garlic and chili.
  2. Place in oven dish (with lid), pour over olive oil and season to taste.
  3. Bake in oven at 355 °F (180 °C) for 30 minutes and serve.

Tried this out with a friend who is lovely and thin, but never the less has been told she must eat healthily. Do not be deceived this meal is very tasty and extremely filling considering its contents, well worth trying. Also try the barramundi with olives, although I substituted barramundi for cod.
