Dropped another pound, down to 134.2 lbs. 😊 Work chaos is finished, everyone is off until January, so now I will focus on cardio and cooking fresh rather than pulling meal preps from my freezer.

Since going Vegan this year I've expanded my menu to include produce that I previously avoided, like Brussel sprouts, zucchini, and green beans. It turns out that roasting them from fresh makes everything taste great! (Canned is nasty, and frozen is best for stews.) So this week's experiment is with cauliflower, which I haven't had in decades for reasons long forgotten. I'm making Aloo Gobi Matar (a spicy, tomato-based Indian curry made with potatoes, cauliflower and peas). I figure I can roast the cauliflower separately and then add it to the curry if I like it.

Still striving for 128 lbs. by NYE, but I will accept 129.9 as success.👁️🏆

I love roasting my veggies, too! I’m not a fan of cauliflower (smell) but it should work beautifully with curry. Great work on the loss!

@Russell and @Morticia: Thanks! This week will be nose to the grindstone. @Navy: I love Moroccan, Thai and Indian curries so, so much! So easy to make. @Moko: I think my prior exposure to cauliflower was mushy & overcooked or raw on the crudites platter. So maybe it was a texture thing 🤷🏻‍♀️. @Anne: Brussels stir-fried or roasted are just the best. Can't believe it took me 50 years to figure that out.

Oh, how I love cauliflower! I had the same eye opening experience with veggies when I moved out on my own and was no longer subject to my mom's cooking. I don't know what veggies ever did to that woman to make her treat them so badly 🤣

I see that moms ruining veggies must be a common theme here. 😝 My mom had the same effect: either boiled them (Brussels and asparagus ew) or breaded and deep fried them (which were mostly tasty but a lot less nutritious)

@Wyo: In my 20's & 30's I ate in restaurants mostly (fine dining, not drivethru's!), so those were my first exposures to veggies that weren't boiled to death. By late 30's I learned to cook; since it's cheaper than going out, I'm okay with a failed food. A head of cauliflower is cheap.

@Otb: I dream big 😊👁️🏆. I find I work harder for the carrot when it's dangling a bit further out of reach. @Moko: I went vegetarian ate age 16, and I'm sure my mother wondered what on earth I was going to eat, beyond potatoes 😄

Awesome work. I love veggies and Indian food. When I went vegan I found it didn’t so much restrict as open my world to a lot of new plant based foods. I haven’t been vegan in a few years now, but planning to head back in a more plant based direction.

@Cindy: Didn't you live in India in your 20's? Going more plant based in 2023 sounds like a great plan. It baffles me when FS members think my diet is sooo restrictive. I try new recipes every week, and my diet is incredibly varied. It helps that I love to cook and I'm open minded and curious. I also don't have a crippling sweet tooth; a mango or a bowl of blueberries is sweet enough for me, so I don't crave cookies and cake.

Great job! I have been thinking of adding Brussels sprouts too. Let me know what you think. Can’t believe you haven’t added zucchini yet, love that stuff.

@Manatee: Brussels have been on the menu this year a billion times since I gave them a chance 😋. Zucchini is okay, but I prefer it to be a minor player in a dish. Today I roasted the cauliflower for my curry, and it's a winner!!!! Tomorrow I'm making stuffed red peppers (with lentils, couscous, lemon and olives).

JB no you must be thinking of someone else. I haven’t been to India, though my fiancé has. Agree that there are lots of great plant based choices if you’re creative and love to cook
