Rachel's divine pudding. It wasn't sweet enough so I had it with lashings of maple syrup abd it was rather nice. I had it warm, is that the best way? It turns out I am familiar with rice pudding - we have a sweeter version back home. I had it once as a kid...had completely forgotten.

Hot or cold ! I’m really not fussy when it comes to the consumption of rice pudding, also , I just get tins of ambrosia 🤣🤣🤤🤤

I struggle with tins generally. I ended up with complications following covid and my dominant hand strength hasn't recovered, although I live in hope😂. So pulling tins open etc is tricky. Do they come in pots? I am surprised that you don't make your own😆

They do come in little portion sized pots! I won’t make my own out if laziness and portion control, if I made a batch, I’d end up eating it, cause there is a still that guy In me that wants to eat and eat ! 🤣 I’m sure you have, but have you tried hand and wrist exercises? Just to try and get more mobility back?

Try squeezing a squash ball or a tennis ball, Suma. That will help hand strength. Gotta be able to open those yummy tins of Ambrosia rice pudding (I Like mine with a dod of strawberry jam)

@Jamie...I know what you mean about portions. In my head, I'm a 7 foot body builder who wants all the food😂😂. My range of movement recovered well, and I was working on strength. Frustratingly the booster has made it flare up again. Back on meds, but awful side effects. It does make me very grateful for my body and all it can do...just need to work on looking after it better, which is where pudding comes in🍨. It's a difficult balance because I work with an immune compromised group and don't want to put them at risk, so felt the booster was my best bet to keep everyone safe.

@Anne, definitely will try that once inflammation settles. Strawberry jam sounds like a tasty idea - I have another rice pudding to get eaten, will give that a go😋 and report back.

Just a wee dod of jam. Don't overwhelm the pudding.😄👍

Anne knows- it’s how we used to get it served at school, with jam in the middle, I do the jam thing and lemon curd, it’s just so delicious 🤤

That's exactly right Jamie............1970's/early 1980's proper school dinners. Before they introduced the fast-food style nonsense. But, they used to heat up our rice pudding. Now I am an adult I have mine cold!

Lemon curd on toast is my preferred way of lemon curding! (or in a lemon meringue pie obs)

Totally agree Anne, Ambrosia has to be straight out of the fridge with Jam / lemon curd in the middle (sometimes with a sprinkle of muesli on top as a crunch!) But if it was a baked homemade Rice Pudding, I’d have it not piping hot! But warm and creamy , with Jam 🤤🤤🤤🤤🤤

Err...muesli? Now this is starting to sound too healthy. I'm sitting here munching on homemade tablet. Pretty sure this is worse than eating sugar😂😂

Confession time - I've never tried lemon curd😅.
