So glad it's Friday so I can catch up on sleep as I've gotten to bed late every day this week.

Yesterday was a high fat day with eating meat, cheese, and walnuts. Will need to balance that out over the next few days. Today is a food day at work, this month it's no food for me to take but my turn for plates and utensils. Scary thought knowing what my team cooks as it's an Italian theme, at least I have extra calories for the week. Much will be highly processed food and little nutrition.

Made a good dinner last night with grilled eggplant slices as a base for a simple eggplant parmesan. Would have been better with a quick fresh tomato sauce but only had a few cherry ones. Grilling it gave it an interesting flavor twist.

New hula hoop works, but it feels really heavy. Not a good thing to do right after dinner. Will try a few minutes before work instead of walking this am. The exercise weighted one is a bit different than the light weight toy ones.

I'm glad it's Friday too. I know you'll navigate the italian meals well... unless there is tortellini. I lose it on tortellini.

Did pretty well at lunch, surprisingly the team brought in some pretty good food. that's unusual. My downfall was the cherry cheese cake, but still had 2 little pieces. One with lunch, one mid afternoon. Trying to figure out how to track lunch. I actually have over a 800 extra calories for this week that I could use.

Reading about your grilled eggplant just made me crave it, but I don't have a grill. I added five FS eggplant recipes to my cook book. That should keep me busy, comparing their calories, fat and carbs and how easy they would be to make. :)

You could do it in the oven but it would have a different taste. Next time I will peel it and hopefully have some fresh tomato sauce. Glad I bought a gas one with part if my tax return, makes it easy to grill after work. I had an old rickety kettle grill.
