Well it is about 140 kcal for 100 g of dry rice noodles. And 25 g of smunchy peanut butter is about 150 kcal. Stir fry some vegetables (coloured peppers, mushrooms, shredded carrot) using fresh garlic, spring onion and fresh ginger as well as fresh red chillies. Add the peanut butter and some water to create a sauce. Add a bit of soy sauce or salt (avoid soy sauce if you have problems with water retention or high blood pressure). Throw in the noodles, mix, wait a minute for the noodles to properly heat and rehydrate, turn off fire and enjoy a meal with about 400-500 calories depending on whether you use a bit of oil to start the stir fry or not. Also you could throw in some prawns or pieces of chicken and add the calories. Hint: a splash of freshly squeezed lemon juice will bring all ingredients together and add a flair to the dish. Alternative recipe: stir fry vegetables cut in tiny pieces incl chilli, etc, add 1 heaped teaspoon vegetable broth (powder, vegan) and 2 cups of water to make a soup. Taste and add salt as needed. Throw in some noodles and take off the fire. This is going to be the least calories in a dish, and it is hot and liquid and has a bit of texture. Let me know how you went on!
