Dang cold 17 degrees this am. What a change from 80 on Wed and Thurs. Looking at my plan for today and the week ahead.

The Chief's game is at noon. I need to get moving this am as I slept a bit late. A run to Walmart and Aldis. Stop at the gym for a bit on my way home. It is a clean the house and laundry day as I only worked on my pantry and cabinets yesterday. I think my plant tower was just delivered so once I get the house in better shape I can work on that. Hoping the old seeds I have will grow.

Monday is my late workday so a workout video before work. Tues and Thurs I can do the gym after work --Tuesday we are supposed to get snow so will see what the roads are like--drivers can get pretty stupid the first snow. Thurs is also pack up the car day to leave for the weekend. Wed I have a much-needed haircut scheduled and work on things to haul to the cabin.

Food: I cooked garbanzo beans in the instant pot late yesterday-1/2 will be going into an Italian bean and potato soup. I have a pound of hamburg from the butcher shop sitting in my frig--for something. Since my week looks pretty busy after work will do something I can just heat up. A batch of bread will also get done today.

Warm bread and soup sound good right about now! It is cold!!! Temps are dropping like a rock here, too. We had snow flurries all morning.

Mom2. I know my brain and body are going to warm comfort foods we have snow starting tomorrow night per the forecast. Next week maybe some warm curries with winter squash. My oldest says she doesn't like curry--I have warned her she will need to try some when I move up the hill from her. So curious if my SIL will like them --he is such a picky eater but I have been slowly working on him over 25 years. LOL I forgot how long it takes to load a recipe in the cookbook especially with Miss Ruby Kitty"s assistance.

I made Ratatouille this morning using acorn squash, and the wonderful thing about it is that it tastes even better the next day, so meal prep is done for M-Th. Labor intensive dish, but healthy and pretty inexpensive. I boil up dried beans every weekend for various dishes throughout the week (they freeze well, too). Inflation hasn't hit the rice, beans & legumes in my area.

I never seem to get all my to do list done. I have gotten used to that so all good. errands done--shopping anymore takes longer as it now takes several stores to locate what you want due to empty shelves. Only did 10 minutes on the rowing machine @ Planet Fitness but it's baby steps back to where I was. I was happy I made it that far. The house is far from perfect--also OK though I would prefer no clutter etc but progress. Soup is cooking bread is still rising. No clue yet what I'm doing with the hamburger. Thinking some sort of a Mexican casserole that I can do in the morning.

JustBananas, I've never tried doing ratatoulli with winter squash. Sound amazing. I cook some sort of legumes in my instant pot most every week. Yes they do freeze well. The moth issue in my house has taken so long because my kitchen is stocked with many types of whole grains, and legumes. I prefer to eat mostly vegetarian, though with running back and forth to the cabin and all the planning for my new house I have been resorting to quicker meals so more animal proteins. I will be freezing that pound of hamburger. I have lentils cooked, brown rice will be cooked today and Natural Grocers had delectica squash. I have HALF OF AN ACORN SQUASH TO BAKE ALSO> MY CAPLOCK IS STUCK> UGG> SO MUCH CHEAPER ALSO TO NOT EAT MEAT MUCH AND I feel so much better. Yay it unstuck.
