Spiced Meringue Cookies
Light and fully cookie with few ingredients, no fats or oils, and flexibility to flavor however you like.
Ingredients
Directions
- Pre-heat oven to 350 °F (175 °C).
- Put room temperature eggs in a bowl with the spices and sugar. Beat on medium speed for 3 minutes. It will be fluffy and a creamy color.
- Sift and then fold in the flour. Sifting helps to avoid lumps. Dough should be almost able to hold a shape.
- Place on a prepared baking sheet and bake for 15 minutes a batch.
- Note: try changing out brown sugar to white sugar and adding extras like zest, coconut flakes, root beer, vanilla, anise or other spices. During preparation split dough in half to create 2 different flavored cookies

Not good for Atkins as it is written, but could easily be modified with coconut flour and Splenda. I'm going to try this and update the nutritional info. Wish me luck!
