JustBananas's Journal, 26 Mar 23

😊Weight loss has slowed to a trickle, but it's fine, as other areas of life just keep rising.🦋 New GF is great, and she loves to hike and dance instead of going out for dinners, which is perfect for my waistline. My exH was the same in terms of preferring activity dates, so apparently I have a "type."🤣

Yoga done, grocery shopping done, meal prep planned for later. New recipe of the week is a vegan Moussaka, using eggplant, potatoes and lentils (instead of ground lamb), soymilk and nutritional yeast (instead of milk & parmesan cheese). Labor intensive, but easy to portion out since it bakes like lasagna.

Have a fantastic Sunday, All!

Nice progress. Slower loss is to be expected. Slow still gets you there.

That sounds so great! Post a pic of the moussaka when you make it. My half Greek vegetarian self is interested. 😁

@Red: This is where it gets hard, since I'm aiming for where you're at currently (about 10 pounds under ideal for my height). Vanity pounds, trying to lean out to show off my muscles 💪🏻 @Otb: Personal life and health seem connected, in that when one goes well, so does the other! 😀 @Russell: I've learned patience, and I'm staying with what is still working in terms of diet and daily exercise. You're obviously still killing it! @Sternfan: I dislike food photos on FS (most are oversized portions, unattractive, or of food that explains why the poster is still heavy), so you won't find them on my journals. I used to make vegetarian Moussaka before I went Vegan -- just eliminate the beef/lamb and keep the traditional topping with the cheese, butter & milk.

Great to hear love life is going well. 😊 So jealous about the moussaka. I’ve been craving it so badly this week. Even being a meat eater, I still prefer the vegetarian one. Please do share your creation. I might get inspired and order one. Or perhaps just go to Santorini and have it there. Best wishes and keep us posted. 💐

Good to see you, @Paula! I would looooove to hit up a restaurant in Santorini and eat authentic Moussaka 😋. Baking it myself takes half the day, so I don't make it too often. No restaurant in my area sells it 😭

Happy for you and your GF! Will you share your moussaka recipe please? Had Greek food last night and was wishing for a veggie type Mousakka

The last 10# is hard but you are consistent so you will get there! I struggled and actually took a 6 month break and just maintained and then talked to my trainer and that is when he put me on macros's and I got the rest off. I turn in my FS journal weekly yet to him. Keep me accountable!

@Red: Agree that accountability to someone (or here on FS!) can keep us on track. I still have some clothes that are tight, so there's more motivation in the closet 👖👙 @Cindy: The recipe takes time, both prepping ingredients and cooking them all. I recommend roasting the veggies instead of pan frying, but either works. https://www.mygreekdish.com/recipe/vegan-moussaka-with-lentils/

JB, would the air fryer be a good option for the veggies?

Thank you, Jb! I do like chopping veggies but sounds like this may be a recipe for a special occasion. Have fun with the new girlfriend!

@Buenita: Thank you, Mrs. Homechef! Have you ever tried moussaka? @Paula: The important thing is to have the eggplant and potatoes fully cooked before layering them in the baking dish -- so an air fryer would work, too! @Cindy: Yeah, this is an all-afternoon project if doing it solo. Better: enlist help with chopping ingredients, a bottle of wine, and music 👩🏻‍🍳🧑🏻‍🍳🍷🍷🎶

That’s a great idea, Jb!

Congratulations on your new relationship. The closer you come to your goal, weight loss becomes more challenging. No worries, it also becomes more rewarding and beneficial...

Great to hear life is moving along so well for you! Enjoy it to its fullest!

Thank you @John and @Manatee! @John -- to an extent I agree with you. A goal can be any number, but an ideal body weight for our height is something entirely different. THAT goal is where weight loss slows. Currently I'm at 20.8% BMI, ideal for my height of 5'5"/165cm. I can't really cut my calories (1200) further and still get all my nutrition for the day, so slow it will be till goal (BMI%= 19).
