🍚🥡 This week's recipe experiment was Cauli Rice. I know, I know, I am waaaayyyy behind in trying this, especially since I'm Vegan and all I eat are whole foods. Cauliflower for me is a meh vegetable -- tasteless when raw, okay when roasted, gross when boiled (mushy). Also, I have no problem with brown rice; I just rarely think to buy it.

On Sunday I hauled out my box grater and "riced" a small head*. Heated up a little EVOO with 3 sliced garlic cloves, added the cauliflower, tossed and cooked in the pan for 6 minutes, then cracked in some sea salt and white peppercorns. Figured the "rice" would pair well with a cup of black beans/red onion/cilantro.

I took one bite out of the pan and immediately scraped all of it into a Tupperware container headed for the fridge. Cauli Rice tastes NOTHING like white rice. It tastes like cauliflower. So that clears that mystery up. Beans were eaten with a microwaved sweet potato instead.

On Monday I took the Cauli Rice into work and ate it cold for lunch. REALLY GOOD!😋 So it's a winner, and I will cook it again. I like it better than roasted, and better cold than warm.

*I'm old school and use manual tools like graters and mortar & pestles instead of mixers or blenders or food processors. Good arm workout. Also cook with dance music, Madonna being a favorite, as this is an excellent time to burn calories before consuming them.

I love a bit of music in the background when cooking. On the big screen TV, this week it has been Beyonce mostly Lemonade. As for cauliflower, I like it lightly steamed or roasted. Have a good day!

@Anne: Mostly I was disappointed about the cauliflower— it’s been so hyped as the miracle rice and mashed potato substitute. I am happy to hear that people are eating more healthfully though. Beyoncé is always great for dancing in the kitchen, too 💃📻

I have not tried cauliflower rice. Good to have another opinion of it.

@Morticia: If you like cauliflower, you'll like it grated/riced. I would not buy it frozen, because it only takes a couple of minutes to grate it by hand or in a food processor from fresh. Certainly not expensive, and since you live on a farm, you probably grow your own anyway.

I enjoy cauliflower raw or lightly steamed, or fried. I want to try it roasted. Not sure I could eat it ‘rice style’. We all have our different tastes. Glad yours didn’t have to go to waste (waist?) keep up the great work!

@Manatee: roasted is easy, just toss flat slices of the cauliflower in EVOO, salt/pepper or smoked paprika, spread single layer & spaced out in 425 degree oven for 20-30 minutes. It's pretty good like that. Riced is softer, done stovetop; I would recommend trying it chilled if you don't like it warm. Hate it? Give it to the wife & kids to try, and yes - then your waist will shrink even more!😁 It's not expensive, anyway. You do grow this in your garden, right?

@Lisa: I have been making a concerted effort to try both new recipes using veggies as the main ingredient and also to revisit the veggies that I used to dislike (trying different ways of cooking them, like roasting or sautéing). A little bit of vegetable broth or olive oil plus sea salt and cracked black pepper can make a huge difference. Let us know how it turns out!
