Really happy with these little ‘millionaires shortbread’ I made up 😊 93kcal each (they’re keto, raw & vegan too)

Sorry Jem I just saw your message too! Ok I’ll pop it here (sorry in adv for the long message). You need a freezer and a lined baking tray then the following ingredients: 1/4 cup coconut flour 1.5 cups almond flour 75g coconut oil 50g maple syrup 1 cap vanilla extract 2tbsp coconut oil 3 tbsp maple syrup 2 tbsp peanut butter 120g dark chocolate 1 tbsp coconut oil Mix the flours, 75g coconut oil, maple syrup and vanilla with a spatula then press into the lined tin. Freeze for 15 minutes. Meanwhile melt the 2tbsp coconut oil and add the 3 tbsp maple syrup and 2 tbsp peanut butter. Once cooled pour the caramel layer on top of the base and freeze for another 15 minutes. Melt the chocolate and mix in 1tsp coconut oil then pour evenly over the Carmel layer. Allow to set and then cut into pieces. Keep refrigerated and nibble away for 5 days 😊

You can leave out the peanut butter for a more classic version but they’re soo good with it in 🤤

Yesssss, thank you!! I only have a rubbishy little freezer box though ☹️ do you reckon it'd work with me just chilling the separate layers in the fridge, say for a couple of hours each? I reckon the deliciousness is worth me spending a whole day making these, no?!?

Oh yeah definitely! The freezer is just a quick version but coconut oil will set in the fridge too 😊 I’ve been munching away but I think they would last quite a while otherwise lol

Thanks l111hyl and Becky 😊 my calculation was a little off before - they are only 90 kcal and 1.78g protein each! I cut the tray into 28 - the whole thing came to 2529 kcal, 182.64g fat, 170.27g carbs and 50.55g protein.

😂 jem that’s awesome! Will you make some today? I was pretty stingy with the caramel in mine because I love the base and chocolate the most 😋 I think food is the first and last thing I think of before each day, I must be in love 😂
