Slept in late this morning (ahhhhhh!😄) then savored a big bowl of strawberries and a pot of scalding black coffee, the combination of which perfumed the whole apartment.☕🍓 BFF and I hit the canyons for a hike to catch up, then stopped by the Farmer's Market. I made us an easy lunch of white beans cooked with rosemary, garlic, onion, lemon & chili on a bed of fresh watercress.
Watercress is my latest experimental ingredient; it's a peppery-tasting green similar to arugula, but stronger. It mellows out a bit if you cook it, so I've been stirring it into soups and curries, too.
Plan on having a chill afternoon reading a book and enjoying the green tea that I found at the market today.

Temporarily turned off comments: logged in to find multiple HOMOPHOBIC & RACIST remarks from a FS member "Cindyoh77", opining it's "sick" and a "depraved lifestyle" to partner with a Korean-American woman. She has left these homophobic and racist comments on other's journals before - not just on mine. Please report Bigotry to the FS moderators.

😊Weight loss has slowed to a trickle, but it's fine, as other areas of life just keep rising.🦋 New GF is great, and she loves to hike and dance instead of going out for dinners, which is perfect for my waistline. My exH was the same in terms of preferring activity dates, so apparently I have a "type."🤣
Yoga done, grocery shopping done, meal prep planned for later. New recipe of the week is a vegan Moussaka, using eggplant, potatoes and lentils (instead of ground lamb), soymilk and nutritional yeast (instead of milk & parmesan cheese). Labor intensive, but easy to portion out since it bakes like lasagna.

🍚🥡 This week's recipe experiment was Cauli Rice. I know, I know, I am waaaayyyy behind in trying this, especially since I'm Vegan and all I eat are whole foods. Cauliflower for me is a meh vegetable -- tasteless when raw, okay when roasted, gross when boiled (mushy). Also, I have no problem with brown rice; I just rarely think to buy it.
On Sunday I hauled out my box grater and "riced" a small head*. Heated up a little EVOO with 3 sliced garlic cloves, added the cauliflower, tossed and cooked in the pan for 6 minutes, then cracked in some sea salt and white peppercorns. Figured the "rice" would pair well with a cup of black beans/red onion/cilantro.
I took one bite out of the pan and immediately scraped all of it into a Tupperware container headed for the fridge. Cauli Rice tastes NOTHING like white rice. It tastes like cauliflower. So that clears that mystery up. Beans were eaten with a microwaved sweet potato instead.
On Monday I took the Cauli Rice into work and ate it cold for lunch. REALLY GOOD!😋 So it's a winner, and I will cook it again. I like it better than roasted, and better cold than warm.
*I'm old school and use manual tools like graters and mortar & pestles instead of mixers or blenders or food processors. Good arm workout. Also cook with dance music, Madonna being a favorite, as this is an excellent time to burn calories before consuming them.

Minimal weight loss this month of February, but it's okay because I've had some non-scale victories (NSVs).🏆
⚠️Trigger Warning: Scroll on by if you are going to twist my experience to insult yourself.
During the 2 years that I grazed incessantly at a new desk job, I quit dating once I hit a BMI of 25% (about 150 lbs./68kg). Clothes didn't fit, my collarbone disappeared, and eventually a pooch appeared. I was embarrassed and ashamed and certainly didn't want anyone to see me in my birthday suit. I am not Lizzo -- the concept of proudly posing in the nude while overweight is not one my brain can accept.
Now it's 2023, and a mini-goal was to put myself back out there, in part because we have Covid vaccines, but also because I finally feel confident in my body again with a BMI of 21%.🦋
This month I met a retired firefighter/EMT on the beach while out for one of my walks. We've got date #3 coming up this Friday, and while he's fun, he's not long-term material. I also met someone in Pilates class when I attended after work instead of my usual lunchtime slot. She's younger, Asian, and works at a lab. Taking things slowly with both, but pretty psyched at the moment!💚💚
