Annual physical coming up this week, and it's also officially 1 year of switching over to a Whole Foods/Plant Based (WFPB) diet. I'm only down about 5 pounds since March 2022 when I had my starting-point labs taken, so any significant changes will be due to diet rather than weight loss. I'm especially curious as to how my micronutrients** will show, as I ditched all vitamin pills/supplements in favor of using real food to meet my needs.

At the Farmer's Market yesterday, GF picked out the weekly experimental ingredient: dandelion greens. This is a bitter leaf, guys. It looks spiky-cool in a garden salad, and I tossed it with almonds, white wine vinegar and orange sections to give a sweet citrus note. Better, however, was braising it in vegetable broth and sliced garlic, draining, then topping it with white beans, red pepper flakes and a squeeze of lemon.

TRICKS & TIPS: For anyone looking to step into a less processed, plant-based diet, I highly recommend just adding one new fruit, veggie or grain to a favorite meal. Instead of bread with soup, use barley. Instead of white rice as your side starch, try quinoa. Swap croutons on your salad for raw sunflower seeds or pepitas. If you don't like a veggie raw, try it roasted in the oven or stirfried. I buy enough of a new vegetable to try it multiple ways.

@TheUnhealthyDaddy: I took your suggestion about the Pozole, and am making it Verde style with Lion's Mane Mushrooms instead of pork/chicken. Trying to work mushrooms into my diet more. These are soft & meaty, and kinda taste like crab.😋

Hi JB good luck with your labs. I’m sure yours will look great you such a variety of food. When I started this I was really good at giving up things but I didn’t really know what to eat. I have gotten better at experimenting and have actually passed my wife but I am sure I am miles behind you but closing the gap. Thank you for leading the way.

@Russell: There you are! How's life? Cycling? It sounds like you're out of the danger zone, so at least you can experiment in the kitchen at your leisure, rather than worrying about eating something that will cause a heart attack. @Red: Thank you! I love statistics, trends, numbers in general 🤓. I have some pretty high goals set for the LDL (70) and HDL (60). Current reads are LDL=95 and HDL=50, with my total=164. I approach them the way we set to hit personal bests/records when exercising, only I'm lifting with mangoes and black beans🤪

Well damn 95/50 is pretty damn good already! Life here is great actually. My wife is back on her feet. Needing to be home worked out well. I used the time to get the apt organized and deeply cleaned. In the kitchen I bought 2 butcher block counters. One for her to bake and one for me to cook and prep. I got another cabinet to hold the air fryer, rice cooker and one pot. Getting things cleaned and organized has really helped her feel mentally stable. Been riding the peleton but not on the road yet. Getting everything done was more important I am looking forward to hearing your results those are pretty aggressive goals.

@Cindy: Kinda funny that I spent money on them when they're free in people's yards. (But they were organic 😄).@Russell: If you have a moment, check out my journal from September 9, 2022. All my stats, labs, and vitals from the beginning of this experiment-turned-WOE are viewable for comparison (March 2022 vs. Sept 2022). I see no reason to do anything half-assed, so...BIG goals.🏆 And BTW, that's pretty awesome that you did all that to get the wife comfy both physically & mentally.

My husband won't let me gather the dandelion greens in our front yard, because he's concerned about contaminants from car exhaust. I'm hoping I get some in the back. We do get what I think is purslane, which is supposed to be edible, but I need to do a little more research to make sure that's what it is. I remember my mom occasionally making them, but she did it with vinegar and bacon...not quite your style 😂 All discussion of backyard greens aside, I'm rooting for you on the labs! 😊 You've done a lot of great work, and I have to believe it'll show up in the numbers

dandelions greens are less bitter before the flower comes gotta pick them young! also if the flower is there, you can make stuff with the yellow parts, they are sweeter

Your body might be leveling off. Are you in maintenance? Or still trying to lose? Hope all goes good with your annual checkup!

Not wishing so much as already have them 😂 As for a garden...between the hail and the rabbits (our neighborhood is overrun with them), I'm not sure we'd have much luck!

@Storms: I’m trying to get down to 19%, so it’s slow going now. Just fine tuning the body’s aesthetics and improving the internal organs. I like having goals for both.

Ever try juicing with dandelion? We would add it to some of the juices we did, makes them interesting.
