yummy chicken cakes and salad with home made dressing

Theadsi from this recipe I had lunch and dinner for me and lunch for my husband. 400 g chicken 300g mushrooms 0.5 red pepper 60g spring onions small red chilli all finely chopped then add 3 eggs 2 tbsp of flour 1 tbsp of low fat creme fraiche cayenne pepper bit of salt and black pepper and mix together. then fry in low fat cooking spray shaping it into cakes on the frying pan. I served it with salad with cos lettuce cherry tomatoes red pepper radishes cress spring onions and coriander and the dressing I made from low fat creme fraiche with dijon and french mustard a bit of honey and lemon juice and added cayenne pepper to add heat. It was so tasty! xx

I'm trying to eat a lot more chicken breast but only managing stir frying so far and that starts to get boring! This looks like something I could do :)

Your doing very well Jersey, I admire that. I looked at your stats and we were about the same, with the identical amount of weight left to lose. I have 2 stones to lose to reach my ideal weight of 60.3 kilos, but instead of feeling slimmer, I feel very fat, have you experienced this?

X3js - last year my weight was going up and down between 76 at the lowest to 85kg when heaviest and then I did feel fat and frumpy but I must say that this year although I am heavier than I was last year I feel different. This year I have been doing regular intense exercise 3 times a week and I have never felt more fit and more toned than I do now. I have loads of energy and my body has changed so much I cannot believe it. My stomach is nearly flat and my tighs are so much more lean and less wobbly and they were my biggest worries. I hope you are not too hard on yourself just look how far you came! Look at your old photos as I find it helps to understand just how much better you look. Do you exercise at all? As I think it has massive e difference on how our bodies shape when loosing weight not only that we are lighter but also toned which looks soon much better. Xxx

Thank you Jersey, I do exercise but probably not as much as I should because I am fearful of loose skin. I changed my diet to a healthy one and wear tummy trainers so that I do not overeat. However since reading your entry, I will checkout booking and yoga. Thank you, I found your advice extremely useful.

Forgot to say I do feel more energetic though, I can run up 4/5 flights of stairs without it breaking a sweat and I absolutely love the exercise burn, I cannot resist stairs, I run up them which I could not do before.

x3js i am so happy that you find that useful xx and that's great that you are getting fitter as I think that this is more important than how we look. as to loose skin the exercise can only help! try weights and core strengthening exercises. yoga will be perfect! more muscle more calories you burn and leaner you will look and flatter tummy! best of luck with it all xx
