Today I baked some rolls. Very tasty and lots of calories so lots more exercise needed this weekend. The rolls were a decent size but look quite small next to the tomato which was massive.

Those look amazing and light. My attempts at bread making always end up a bit heavy. Do you have a recipe you follow or have you been baking for so long you just know what works for you?

Thanks. For these rolls I use the Hairy Bikers basic rolls recipe. It's on the BBC food site. The key I think is to prove the dough until it least double in size. Usual suggestion is to use a warm airing cupboard for this. My airing cupboard does not get warm - So I used the car with the windows open to get a temp of 24 - 27 degrees. A cheap digital probe thermometer from ebay is great to verify the temp for proving .

I have the same issue with proving so love the car tip. I do like a lot of the hair bikers' stuff so I'll go and find the recipe.

With the rolls above I even managed a man multi-task, went shopping with bread proving in a bowl on the passenger seat.
