Debbie Cousins's Journal, 09 Mar 19

Thanks, everyone. I survived - until about JUST NOW! I enjoyed having my little grandson overnight. He seemed a little "off," though. Still quite rambunctious, but not hungry at all. He was thirsty all the time, and peed (on the potty!!!!) about every 20-30 minutes. I was getting worried that he might be childhood diabetic! His sister had been sick a couple days ago. Threw up at school, and came home with a temp of 103. Last night, Jack started feeling a little warm. He also held his head and said, “My head hurt. My head bouncing,” which could have meant throbbing. So, I gave him just 1/3 dose of Children’s Tylenol before we went to bed.

This morning, I made him 2 slices of bacon, 2 small sausage patties, and a clementine for breakfast. He didn’t eat one bite of any of it (guess what IIII ended up having for breakfast!) He still continued to drink. I took him with me to Bed, Bath and Beyond, and between the car and the door to the store (about 4 car lengths), he started shivering so bad that I grabbed three big towels from the display and wrapped around him in the back of the cart.

Before I was going to take him home, I stopped at McDonalds and got him a hamburger and small fry (because I didn’t want to send him home having had NO food!) He didn’t even take a bite of the hamburger. His dad wasn’t quite ready for him to come home yet, so we headed to Walmart while he was eating the fries. As soon as we got there, ALL FRIES BROKE LOOSE! Vomited French fries everywhere. The car seat is still sitting outside on my deck. At least it was just French fry chunks, and nothing that really SMELLED like true vomit.

Oh, I took off the bun & condiments and ate the single hamburger patty myself. My stomach started feeling a little queasy. When I got home, I made some hot tea (had most froze to death trying to get all the cushioning off of the car seat. Had to come in without fully succeeding.) Then, I happened to think (here’s where that old devil started showing his ugly horns and tail!!!) , “I bet I’m gonna get sick, too. If I’m gonna get sick, I might as well go ahead and eat anything I want, if I’m just going to barf it up anyway.” Right? SOUNDS very logical, don’t you think?

Well, what I ended up making was pretty reasonable. I took two of my Keto Rolls (You all just HAVE to make those lifesavers!!!). Instead of just cutting them in half, I cut them into three slices each and laid them on a little baking sheet and toasted them in the Breville convection toaster until they were pretty crispy. I spread EVERY piece with butter, then took two TBSP of crunchy peanut butter and put on four of the pieces, and one Tbsp of strawberry jam and put on the other two. What a wonderful snack!

It also gave me a BRILLIANT idea, though!!! The way I made the Keto Rolls the first time, they had big holes in them (think sour dough bread). The 2nd and 3rd times I made them, I triple-sifted the dry ingredients, so that the baking powder would be very evenly distributed through the batter. That made for a BEAUTIFUL, dense texture, with no holes in it! I think what I’m going to try next is cutting each little roll into even THINNER slices, and making them into “crackers” of sorts. I’ll have to experiment a bit and get back to y’all on that.

SO, after only 27-1/2 hours with the little kiddo, I’m thoroughly pooped! Well, not REALLY, or I’d weigh a couple less pounds! Hopefully, the Keto rolls will get things moving.

Ok, I’m falling asleep writing (at 2:04pm in the afternoon!) I think I’m going to indulge in a nap (after I warm myself up with the hair dryer in the bed for a few minutes). When I get up, here’s what I have to do:

No, never mind. It would take too much energy to tell you.

I’ll just go to bed and hopefully DO it all when I get back up.
