Just made a giant batch of red lentil soup with a handful of fresh spinach, thrown in diced carrots, onions, celery, and some lean Jenio Italian turkey link sausages. Perfect and amazing doesn’t even begin to describe this recipe!

Did you use red or brown lentils? Did you use broth to make the soup? Do you use any special preparation with the lentils or do you just kind of chuck them in the pot there? Never really cooked with lentils, but I was given a bag of brown lentils from the food bank trying to figure out what to do with them.

Are used to red lentils and just threw them in the pot. I shortened the cooking time because red lentils cook faster than brown or green lentils. I made them in an Insta pot and only had to cook for 10 minutes first I sautéed the vegetables in a tablespoon of olive oil Are used carrots, onions, and celery. I also used 4 cups of unsalted vegetable broth a can of fire roasted tomatoes a few tablespoons of concentrated tomato paste in a tube and the kicker was a use about a quarter cup of diced sun-dried tomatoes. It made it really yummy. I did a slow release for the Insta pot . But I’ve looked on the comments for this recipe and any kind of lentil will work fine.

Cool, thanks for the updates on the recipe. I think I can work with that I don't have an instant pot but I can always make them the old-fashioned way... it will just take longer. 😁 I love sun-dried tomatoes, but I can't often keep them in the house cuz I eat them too quickly and they cost a lot, lol. Great idea of additions though I'll keep it in mind just in case I have snag some in the future. As for the holy Trinity I keep them on hand don't think I'm ever without carrots, onions, or celery the basics. 🤷 Garlic's is another one that I almost always potatoes are another as most meal can be made use these items and shelf stable ingredients. Between being relatively cheap and keeping well as long as they're put in the appropriate places in good condition I don't see any reason not to keep them on hand at all times relatively in bulk. I'm able to bulk out any recipe I make on hand and I cook almost everything from scratch which really reduces my price load. It also helps me straight to what I'm given from other places such as the food bank or gifts from family members.

I got the sun-dried tomatoes at Walmart. It was only a little over two dollars for a decent sized bag and they last a pretty long time well worth the investment in my book.
