Day 2 - Cabbage Soup "diet"

I was dreading today - just vegetables and soup (vegetables). So this morning I had the weirdest breakfast I have ever had - some roasted butternut, broccoli, cauliflower and beans. I roasted a whole batch last night and will eat them over today and tomorrow. I have brought some slices of carrot and celery to snack on, a bowl of the roasted vegetables and the required soup to eat today for lunch. Tonight I have sliced up my sweet potato for roasting and will eat it with a big salad....plus a bowl of soup (it is amazing how quickly the soup becomes blah!).

I probably only have enough soup for tomorrow and maybe some of Friday, so will make a fresh batch up with some different spices in.

I think I am slowing achieving my goal with this as it is forcing me to plan ahead - a much needed tool to stay on track.

I make my own soups in a slow cooker that my husband brought me. I portion off the soup into plastic containers and freeze it. In my most current batch I got the 16 portions

Hi Joannemay :) I will definitely be making soups up for work - probably more in the winter. I was always put off because the microwave at work is like a biological testing ground - but I bought a fantastic thermos flask and heat my soup in the morning and it is still reasonably hot by lunch time.
