It’s the texture I enjoy. Zero flavor but high in vitamin C. I think it’s a highly enjoyable vegetable for those trying to lose weight. Not useful for hardcore bicyclists 🚴♀️

Bitter melon! Always reminds me of home. Never managed to find it in the UK so far. Lotus root - now that is a blast from the past. I last had lotus seeds and root aged 5.

Suma, this is the first time I bought lotus roots here in US. Qualify no good. Didn’t have the particular harmony of crispness and slime I was looking for.

I like the slime factor, like in okra. When I cook for others, I reduce the slime factor. Step son-in-law doesn't eat like the rest of the family. Strictly, meat, rice & starches. Not really a veggie person. So for holidays I try to make healthy food more appealing.
During family gatherings, we make sure to have traditional dishes & Americanized versions of chinese food.
