General Tsao Chicken

A healthy spin on a traditional favorite chicken and rice dish that's full of taste and flavor.

Ingredients

Directions

  1. In a medium bowl, whisk together broth, cornstarch, sugar, soy sauce, vinegar and ginger; set aside.
  2. Heat oil in a wok or large skillet over medium-high heat. Add scallions, garlic and pepper and cook 2 minutes. Add chicken and cook until browned all over, about 5 minutes.
  3. Add reserved sauce and simmer until sauce thickens and chicken is cooked through, about 3 minutes.
  4. Serve chicken and sauce over rice.
  5. Yields about 1 cup of chicken and sauce and 1/2 cup of rice per serving.

I only used 1 tablespoon of clover honey. Served with a cauliflower veggie rice and yellow beans from my garden. DELICIOUS.

Served with stir-fry veggies (broccoli, yellow pepper, celery, carrots and white onions) that had oil with garlic. Only changes were half stevia and half real sugar. Couldn't find my white vinegar so used honey-ginger vinegar. This is a definite keeper for my diabeties. Loved it. Will cook for company first chance I get.

This is a definite keeper! I cooked my chicken in half of the oil called for and a little extra broth, and cut the garlic in half, but this was amazing!

This was okay. I did not see much of a resemblance to General Tso's Chicken though. It tasted more gingery but still good over the rice. I used brown and white rice.
