Roasted Garlic Cauliflower

A low carb side dish for cauliflower.

Ingredients

Directions

  1. Pre-heat oven to 450 °F (220 °C) and lightly grease or apply cooking spray like Pam to large casserole dish.
  2. Toss cauliflower in oil and minced garlic, coating well placing in dish.
  3. Cover with aluminum foil and bake 25 minutes stirring halfway through.
  4. Uncover, stir, and top with parsley and pecorino romano then broil 3-5 minutes until golden.
  5. Salt and pepper to taste and serve.

I've never really liked cooked cauliflower, but this recipe is AWESOME!!!!! I could eat this all the time!!!!

Lovedddd it. The whole family did, really. Only complaint was that it cooled very quickly, so keep it covered!

I make a version of this often! I spritz on some lemon when it's done. Really good with other vegetables too, like broccoli or carrots.

Excellent...the lemon ads a nice zest. I used seasoned salt and I didn't add the cheese because I didn't have any on hand but still very good.
