Peanut Butter Cups

These awesome cups taste just like peanut butter ice cream.

Ingredients

Directions

  1. Mix half a cup of peanut butter with one container of whipped topping like fat free cool whip.
  2. Spoon in muffin tin with cupcake papers.
  3. Drizzle with chocolate syrup.
  4. Freeze for 6-8 hours.

Reviews 
Made these using low fat/sodium peanut butter and low fat whipped topping. The first time I made them, freezing the chocolate on top was kind of strange because it froze with a different texture/consistency than the peanut butter part. Going to try again and just add the chocolate as they are being eaten. Overall, they are very good!

I don't know that I would recommend this in the Induction Phase of Atkins, especially if it's your first time or it's been a while since you've done it simply because it's sweet and because I think part of the purpose of Induction is to help you kind of 'get over that' (for lack of a better way to say it), but that's just me. However, it only has 9g of carbs per serving (almost half of your carbs for the day on Induction) which is fine 'technically' as long as you don't go over your 20. I am adding this to my recipes and I will certainly make them when that craving comes along!! They look wonderful!!

Yumm! I revised it, made one serving with 2T peanut butter and 5T sugar free cool whip. Didn't use chocolate. Would have been better if I would have frozen or at least chilled it, but couldn't wait. This is actually "company worthy" Having the girls over for a winter swim party,(yeah I live in CA) and will serve this as dessert! Thanks
