Apple-Pecan muffins without applesauce but no less fabulous.
Ingredients
Directions
- Pre-heat oven to 400 °F (200 °C). Coat a 12 cup muffin pan with spray.
- In a small bowl, mix 2 tablespoons of brown sugar with pecans and cinnamon. Set aside.
- In a medium bowl, whisk both flours, baking soda and salt.
- In a large bowl whisk remaining brown sugar and oil until combined. Add eggs one at a time, whisking to incorporate completely. Add vanilla.
- Stir into large bowl flour mixture, 1/2 at a time, alternating with buttermilk until just combined.
- Pour mixture into muffin pan, filling each 2/3 full. Top with pecan cinnamon mixture. Bake for 20 minutes or until toothpick comes out clean.
- Note: inspired by a Ellie Krieger recipe.

Haven't tried it yet, but, the ingredients list has 1 golden delicious apple but nowhere in the directions does it mention how the apple should be cut (slices, chunks) nor when to add it into the mixture.
